Hovdenakk Hjort in Ørsta farms Norwegian red deer and also runs Vassenden Samdrift AS with a herd of cattle, so the farm offers both venison and beef. Attached to the farm is a modern abattoir approved by Mattilsynet (the Norwegian Food Safety Authority), where hunters and hunting teams can hand in game. The deer farm and the game reception point run in parallel: the farm's own animals and game brought in are slaughtered at roughly the same time, with occasional closures out of consideration for Mattilsynet and for other farms that have their slaughtering done there. All products are vacuum-packed, aged and handled in accordance with regulations.
