Marthas Delikatesser is a small, specialised producer of mayonnaise-based salads, mayonnaise and herring from Sotra, just outside Bergen. Founded in 1992 by Ole Magne Høyland, who started Rekespesialisten after discovering that the prawn salad at a hotel contained hardly any prawns. He raised the prawn content from 15 to 50 per cent — a philosophy the company still holds to. Named after Martha Offerdal, who was known for her excellent salads. The products are made by generous folk with love and respect for good food traditions, with plenty of good ingredients throughout.
